Roasted French Bone Marrow

Ingredients

Beef Bone Marrow
Dry bread crumbs 100g
Lemon ½ pc
Butter 20g
Garlic 1 clove (finely chopped)
Italian “flat-leaf parsley” 1 bunch
Salt
Black pepper

Method

1Pre-heat the oven at 180 degrees Celcius.
2Pick the parsley leaves and chop roughly.
3Mix the bread crumbs, butter, garlic and parsley with a pinch of salt and freshly ground black pepper to taste.
4Zest ½ lemon into mixture and a squeeze of lemon juice.
5Season bone marrow with salt. Cover the marrow with a thick layer of the bread crumb mixture
6Put into the oven and roast for 15-20 mins
